They grow and mill their diverse heritage Scottish grain varieties on the Balcaskie Estate in the East Neuk of Fife, using an innovative cool-running Zentrofan mill. Then, the mixture is milled to a fine wholemeal flour which is suitable for making real bread (with long fermentation and no additives), pastries, cakes and biscuits!
The Scottish Organic Wholemeal Wheat Flour (Balcaskie Landrace) comes in 16kg bags at a standard wholesale price of £22, with greater discounts available to members and for buying in bulk.

Scotland The Bread has established a Scottish flour and bread supply that is healthy, equitable, locally controlled and sustainable. The idea is to grow nutritious wheat and bake it close to home. Scotland The Bread was founded in 2012 by Andrew Whitley and Veronica Burke, with an innovative and collaborative approach that had already been established through their work at Bread Matters Ltd to develop a more nutritious grain, flour and bread supply chain. Working with scientists in leading institutions, they began to research heritage Scottish and Nordic wheats to find nutrient-rich varieties that do well in local conditions.
